Chicken Pot Pie

Last week I was feeling really nostalgic.  I don’t know if it was because of Thanksgiving, or maybe it’s just the way my homesickness is manifesting itself.  Every night last week I made a meal that was really reminiscent of my childhood.  This is a chicken pot pie recipe that I remember my mom making all the time.  Please keep in mind that this is in American measurements with a few ingredient tweaks. 
Ingredients:
1/4 cup of butter
1/3 cup of all purpose flour
1 and 3/4  cups of chicken broth (I used two cubes and boiling water)
2/3 cup of milk
2 cups of cooked chicken (I used a little bit more than this as that’s just how we freeze our chicken)
1 package of frozen veg (the ones in the UK are larger than in the States, so I eyeballed it)
2 Diced potatoes
Salt and Pepper to taste (Don’t tell my husband, but I skipped these.  I’m trying to cut down on his salt)
Puff Pastry for topping
 
I find that I make a bit of a mess doing this and used a few different pans. 

Start by cutting up the chicken into cubes and cooking it through.  Also cube and cook the potatoes, and boil the frozen veg.  Be sure to drain the potatoes and veg of water and the chicken of excess fat. 
 
Melt the butter on low in a large pot, and then stir in the flour until smooth.  Cook for about a minute stirring constantly.  Gradually add the broth and milk.  Then cook on medium heat.  Stir until thick and bubbly. 

Then slowly add the chicken, veg and potatoes.  This is where you would add the salt and pepper. 

 
Now for the fun part.  I poured the entire mixture into a large Pyrex dish and let it cool.  In the States we always had a bisquick topping, I couldn’t find that here so I picked up some puff pastry.  I rolled it out and simply laid it on top of the chicken and veg.  I even got creative with shapes!  If you want to get the filling done first I would recommend waiting until you are ready to stick it in the oven to put the pasty top on.

Heat the over to 350F or about 175C and bake for about 30 minutes. 
 
I was so pleased with how this came out, my husband even loved it!  It really hit the bit of nostalgia I needed on the head!
